Atualmente coordena o Food Research Center (FoRC), um dos Centros de Pesquisa, Inova\u00e7\u00e3o e Difus\u00e3o (CEPID) apoiados pela FAPESP. Membro (2000-2015) e consultora (2015-atual) da International Commission on Microbiological Specifications for Foods (ICMSF). Membro do International Committee on Food Microbiology and Hygiene (ICFMH) e da International Life Sciences Institute (ILSI-Brasil). Membro do Corpo Editorial do International Journal of Food Microbiology. Foi presidente da Sociedade Brasileira de Microbiologia em duas gest\u00f5es e editora do Brazilian Journal of Microbiology por quinze anos. Foi membro da Coordena\u00e7\u00e3o de \u00e1rea de Engenharia II (Ci\u00eancia e Tecnologia de Alimentos) na FAPESP e do Comit\u00ea de Assessoramento da \u00e1rea de Ciencia e Tecnologia de Alimentos no CNPq. Possui Doutorado em Biologia pela Universidade Federal de Goi\u00e1s, tendo conduzido seu trabalho de tese sob a orienta\u00e7\u00e3o do Dr Frederic Bushman na Universidade da Pennsylvania. \u00c9 Pesquisador Associado do FoRC (Food Research Center), um dos Centros de Inova\u00e7\u00e3o, Pesquisa e Difus\u00e3o (CEPIDs) apoiados pela FAPESP, e pesquisador colaborador do Laborat\u00f3rio de Imunologia Aplicada do Instituto de Biologia da Universidade de Brasilia. Trabalhou por 10 anos como pesquisador no Departamento de Microbiologia da Escola de Medicina da Universidade da Pennsylvania. Foi pesquisador visitante por 1 ano no Helmholtz Institute M\u00fcnchen. Tem experi\u00eancia em estudos de ecologia molecular de diversos sistema microbianos, incluindo solos, tapetes microbianos e nos \u00faltimos 10 anos tem concentrado sua pesquisa no microbioma humano e de outros hospedeiros. Seus interesses de pesquisa incluem as intera\u00e7\u00f5es entre fun\u00e7\u00f5es do microbioma em sa\u00fade e doen\u00e7as, e como ele \u00e9 modulado pela dieta e pelo sistema imune.<\/p><p><a S\u00e3o Paulo (2001). Realizou p\u00f3s-doutorado na \u00c9cole Nationale Superieure Agronomique de Toulouse (2009-2010) e na Universidade de S\u00e3o Paulo (2001-2002). Atualmente \u00e9 Prof. Associado da Faculdade de Ci\u00eancias Farmac\u00eauticas da Universidade de S\u00e3o Paulo. Tem experi\u00eancia na \u00e1rea de Ci\u00eancia e Tecnologia de Alimentos, atuando principalmente nos seguintes temas: composi\u00e7\u00e3o de alimentos, metabolismo secund\u00e1rio em plantas, com foco nos compostos vol\u00e1teis. Al\u00e9m da import\u00e2ncia de tais compostos para a qualidade sensorial de frutos e hortali\u00e7as, ampliou o leque de atua\u00e7\u00e3o, estudando seu potencial ben\u00e9fico para a sa\u00fade. Tem particular interesse em terpen\u00f3ides, nos fatores que regulam sua s\u00edntese em plantas aliment\u00edcias, m\u00e9todos de extra\u00e7\u00e3o e os efeitos potenciais sobre a regula\u00e7\u00e3o dos n\u00edveis mediadores inflamat\u00f3rios em c\u00e9lulas musculares. Tem utilizado modelos in vitro e abordagens \u00f4micas (prote\u00f4mica e metabol\u00f4mica direcionada e n\u00e3o-direcionada), nos estudos em vegetais e em c\u00e9lulas em cultura. Diretor Executivo do Centro de Pesquisa Inova\u00e7\u00e3o e Difus\u00e3o (CEPID) Food Research Center. Integrante do N\u00facleo de Apoio a Pesquisa em Alimentos e Nutri\u00e7\u00e3o da Univ. de S\u00e3o Paulo (NAPAN). No Instituto Franc\u00eas de Pesquisa Agropecu\u00e1ria (INRA) desenvolveu pesquisa em busca de novos metab\u00f3litos de monoterpen\u00f3ides diet\u00e9ticos utilizando ferramentas in silico para predi\u00e7\u00e3o do metabolismo de xenobi\u00f3ticos e espectrometria de massas de alta resolu\u00e7\u00e3o. \u00c9 professor do Departamento de Alimentos e Nutri\u00e7\u00e3o Experimental da Foi membro da Diretoria da Sociedade Brasileira de Alimenta\u00e7\u00e3o e Nutri\u00e7\u00e3o (SBAN) de 2007 a 2018, tendo ocupado por \u00faltimo o cargo de Secret\u00e1rio-Geral. Tem interesse no entendimento do sistema quorum sensing na regula\u00e7\u00e3o da patogenicidade de micro-organismos, deteriora\u00e7\u00e3o de alimentos e suas formas de controle. \u00c9 um dos coordenadores da REPEQUAB (Rede de Pesquisas em Queijos Artesanais Brasileiros). \u00c9 Pesquisador Associado do Food Research Center, um dos Centros de Pesquisa, Inova\u00e7\u00e3o e Difus\u00e3o (CEPID) da FAPESP.
